Chef Brendan Collins’ one-night-only Dinner With Friends on Thursday, Sept. 19, at BOA Steakhouse in West Hollywood will feature chef Jason Fullilove of Norma. GMCLA turns Holy Water into cocktails
West Hollywood cocktail bar Holy Water debuted a boozy fun give-back cocktail – Sing out, Louise! – served through Sept. 30, every time someone orders the specially named cocktail, Holy Water will donate $5 to Gay Men’s Chorus Los Angeles.

Shay lands José Andrés for food, beverage operations
The Shay, part of Destination by Hyatt, has hired José Andrés Group as the exclusive food and beverage operations manager for the property, effective Sept. 1. In this role, JAG will manage all aspects of the food and beverage experience at The Shay, including two new restaurants, in-room dining, the lobby bar, meetings and events. This fall, JAG will debut Zaytinya at the lobby level, which features innovative mezze inspired by the rich regional diversity of Turkey, Greece and Lebanon. Nobu chefs use top-notch sushi-making techniques
The sushi chefs at Nobu Los Angeles, located in the heart of West Hollywood, use a specific six-step sushi making technique for each piece of their nigiri. It starts with wetting their hands and placing the fish horizontally on the palm. Then they add a pinch of wasabi and a loose ball of rice on top of the fish and gently press on the sides and top of the rice with two fingers. Turning over the piece of nigiri, they curve their hand around the shape of the sushi rice with their index finger and thumb, shaping the fish around the rice underneath. Then they place their index and middle fingers gently on top of the fish and repeat these two final steps after flipping the fish 180 degrees. Although this process seems lengthy for a simple piece of nigiri, it ensures that the rice is still fluffy, and the piece of fish is shaped for the perfect bite. There are many additional aspects that are included in the art of sushi making such as rice preparations (Chef Nobu uses monk fruit instead of sugar when seasoning his rice), garnishes from caviar to Matsuhisa dressing, and the cut of the fish.
