Executive chef Ricardo Zarate is going back to his roots, preparing rustic Peruvian dishes at the pop-up Colibri inside Los Balcones in Hollywood. Start with a Peruvian Pisco sour cocktail or a spicy margarita in a relaxed atmosphere. Menu items include raw sea bass in leche de tigre, charred snap peas, Caesar salad with quinoa and beer braised short ribs.
