It seems like there are new wine bars and restaurants opening in Los Angeles every week. While these new openings are exciting, it’s difficult finding new spots that are truly unique or can become staples in your after work or Saturday night routine. When I first learned about Wilde Wine Bar and Restaurant I was intrigued. Their focus on rare, esoteric, minimum production wines piqued my interest, and their central location near the corner of La Brea and 3rd couldn’t be more ideal.
I decided to attend one of their Wilde Wednesday events, where at the tasting, wine makers are in attendance discussing the line up, answering questions, and enjoying the outstanding food along side customers. For people who are not in the wine industry, this is a wonderful opportunity to learn more about the art of wine making, giving one a greater appreciation for what’s in their glass. On the night I came in, Seebass Family Wines from Mendocino, California were being poured. Along with the three-wine flight, I also decided to also order a three-cheese plate with the triple cream brie, vintage 5 year Dutch gouda, and the Irish cheddar. First to taste was the 2014 Grenache rosé. This fresh vintage, showing bright strawberry, spice, and blood orange, paired beautifully with the sharp and creamy Irish cheddar.
The double gold winner 2012 Grand Reserve Chardonnay followed. With 100 percent malolactic fermentation and 20 percent new oak, the quintessential vanilla, toast and golden apple notes of a California chardonnay were present. However, under the guidance of their French winemaker, there was also an elegant minerality and balanced acidity, reminiscent of a white burgundy that made it a wonderful accompaniment with the triple cream brie. Lastly, the 2012 Reserve Syrah was poured. Similar to the Syrah of Northern Rhone, plum, black cherry, white pepper and black truffle were all present in this wine. Aged gouda and syrah happens to be one of my favorite wine and cheese pairings, and it again did not disappoint.
Not only was the wine tasting impressive, I also thoroughly enjoyed the cheese plate, and will be back to try the additional delicious items on the menu. I had wonderful conversation with the owner Lorna, and found her dedication to sharing beautiful wines with her customers inspiring. I will be going back to Wilde soon.
