Lou DeRosa, who operates Marconda’s with his father Dave DeRosa, as well as his four sons, said the butcher shop has been at the Market since 1941 and has always been a family operation. He said the most popular cuts for Valentine’s Day include filet mignons, rib-eye steaks, Frenched lamb racks and chicken breasts. Marconda’s features Niman Ranch USDA prime natural beef, as well as chicken that is cage free, sustainably farmed and free of antibiotics, hormones and preservatives.
