Maison Giraud’s First Anniversary
Alain Giraud is pouring free champagne cocktails at dinner throughout the month of December to salute the restaurant’s success. The champagne pairs nicely with this month’s seasonal dish, a rich and slow-cooked cassoulet. This signature dish originates from the city of Toulouse in southwest France. It takes several days to prepare the dish correctly, “cracking the crust” each day and folding it back into the stew. Chef Ricardo Zarate and business partner Stephane Bombet, alongside Food GPS’ Joshua Lurie, have invited the local culinary legend Josiah Citrin to push the boundaries with ceviche. The seafood-focus event is on Sunday, Dec. 9 with six seating times. Citrin will help create four ceviches and one dessert.
