Maison Giraud’s First Anniversary
Alain Giraud is pouring free champagne cocktails at dinner throughout the month of December to salute the restaurant’s success. The champagne pairs nicely with this month’s seasonal dish, a rich and slow-cooked cassoulet. This signature dish originates from the city of Toulouse in southwest France. It takes several days to prepare the dish correctly, “cracking the crust” each day and folding it back into the stew. Guraud’s cassoulet is made with white beans and an assortment of meats including duck confit, pork belly and Toulouse sausages. Chef Ricardo Zarate and business partner Stephane Bombet, alongside Food GPS’ Joshua Lurie, have invited the local culinary legend Josiah Citrin to push the boundaries with ceviche. The seafood-focus event is on Sunday, Dec. 9 with six seating times. Citrin will help create four ceviches and one dessert. Ten percent of proceeds benefit American Red Cross Hurricane Sandy relief efforts. Ceviche Night is $85 per person, inclusive of tax and gratuity. Now until Dec. 31, try the Armageddon Burger at Slater 50/50 made with 1/3 of a pound of meatloaf made from ground beef and a ground bacon blend with rendered pancetta. It’s wrapped around a thick cut of bacon and crusted with whole grain mustard. The burger sits on a stack of arugula with thinly sliced prosciutto and topped with smokey chipotle ketchup.
